When we say sustainable what do we mean.. that it’s adaptable in the face of change? Or that is focusing lifereally on lasting as long as possible over all other goals… I often think we need to articulate this better because it can get very buzzwordy and intangible to young people who we pushing this concept too

I'll definitely ask the organisers as well, but for me it's all about the combination of what you say: building a certain flexibility into the business model + long-term financial vision. I would add to it that the business plan, speaking of innovation, should have some form of return on culture style information in it. Who does this business model speak to when it comes to the kind of experiment being run?
